EXPLORATION AND SAFEGUARDING OF TRADITIONAL ALCOHOLIC BEVERAGES – THE CASE OF THE CALABARZON REGION

Abstract:

This mixed method study seeks to investigate and protect traditional alcoholic beverages in the CALABARZON area by achieving the following goals: documentation of its gastronomic identities; statement of significance; measuring the awareness and sustainability initiatives; providing information; and development of Safeguarding Plan. This used both cultural mapping and descriptive research simultaneously. Purposive sampling was used to choose 10 traditional alcoholic beverage producer participants, who were considered to have more than 30 years of business operation and second or third generation producers of lambanog or alak sa Sasa. The 300 respondents in descriptive approach consisted of four groups of population, including local community, tourists, traditional alcoholic beverage producers and tourism officers. The researcher used guide questions adapted from both Cultural Mapping Template of USTGS-CCPET (2017) and NCCA Cultural Mapping Toolkit. The conducted interviews were transcribed, translated to English, and analyzed using content analysis while statistical data were treated using frequency and percentage distribution and weighted mean.

Traditional alcoholic beverages, lambanog and alak sa Sasa, are popular in the Philippines and are made from coconut sap and nipa sap respectively. They have a long history and were consumed during local celebrations, parties, and events. Majority of the producers rely on their own lands for raw materials but may outsource from other farms in cases of damage. The production process involves fermentation and distillation, using both modern and traditional equipment and techniques. Lambanog is known for its high alcohol content, strong aroma, and the ability to improve sleep quality and produce a feeling of euphoria. Alak sa Sasa has a spicy and sweet aroma, a pleasant flavor, and a transparent look. These traditional beverages are also significant sources of income and employment opportunities, attracting tourists to the area. In addition, they are associated with cultural beliefs and traditions, as well as socializing and hospitality.
